Ingredients

  • 1 lb pasta of choice

  • 1 lb beets (4 small/medium)

  • 2 tbsp olive oil

  • 1 shallot, unpeeled

  • 4 garlic cloves, unpeeled

  • 2 cups whole milk ricotta (or blended cottage cheese), divided

  • ½ cup Parmesan, grated

  • 1 lemon, zested & juiced

  • ¼ tsp nutmeg

  • ½ tsp salt

  • Black pepper, to taste

  • ½ - ¾ cup reserved pasta water

Toppings:

  • Whipped ricotta (or blended cottage cheese)

  • Crushed pistachios

  • Parmesan

  • Fresh mint

  • Olive oil

Instructions

Roast the Beets & Aromatics:

  1. Preheat oven to 400°F.

  2. Wrap washed beets in foil with 1 tbsp olive oil, salt, and pepper.

  3. Do the same with shallot and garlic. Roast for 35-40 minutes (shallot/garlic done at 30 minutes).

Cook Pasta: 


4. Boil salted water and cook pasta according to package instructions. Reserve ½ - ¾ cup pasta water.


Make the Sauce: 


5. Peel roasted beets. 6. Blend with 1 cup ricotta (or blended cottage cheese), shallot, garlic, Parmesan, lemon juice/zest, nutmeg, salt, pepper, and ⅓ cup pasta water until smooth.


Combine: 


7. Heat sauce in a pan, adding more pasta water if needed. Mix in drained pasta.


Serve: 


8. Blend remaining 1 cup ricotta (or cottage cheese) until whipped. 

9. Top pasta with whipped ricotta, pistachios, Parmesan, mint, olive oil, salt & pepper. Enjoy!
