Ingredients

  • 1 package 93% lean ground beef

  • 2 cans kidney beans (drained)

  • 1 can tomato sauce

  • 1 can diced tomatoes

  • 1 tbsp olive oil

  • 1/2 white onion (diced)

  • 1 jalapeño pepper (diced)

  • 1 can chipotle pepper in adobo sauce (use only the sauce, not the peppers)

  • 2 cups beef bone broth

  • 2 tbsp non-fat plain Greek yogurt (for topping)

  • 2 tbsp cheddar cheese (for topping)

  • Green onion & cilantro (for topping)

Seasonings: paprika, garlic powder, chili powder, cumin, salt, pepper

Instructions

1. Cook the Beef:

  • Heat olive or avocado oil in a large pot over medium heat.

  • Add the ground beef and cook until browned..

2. Add the Veggies:

  • Dice the jalapeño and onion.

  • Add them to the pot with the beef and sauté for 5 minutes.

3. Add the Canned Ingredients:

  • Stir in the kidney beans, tomato sauce, diced tomatoes, chipotle adobo sauce, and bone broth.

4. Season the Chili:

  • Add paprika, garlic powder, chili powder, cumin, salt, and pepper to taste.

5. Simmer:

  • Bring the chili to a boil, then reduce the heat to a simmer.

  • Let it cook for at least 25 minutes (up to 1 hour for richer flavor).

6. Serve and Top:

  • Ladle the chili into bowls.

  • Top with Greek yogurt, cheddar cheese and cilantro.
