Ingredients

  • 4 chicken breast thins (about 1.3 lb total)

  • Salt and pepper, to taste

  • 2 tablespoons olive oil or avocado oil, divided

  • 2 cloves garlic, minced

  • 1 pint grape tomatoes, halved

  • ½ cup blended cottage cheese (thinned with water or broth if needed)

  • ¼ cup pesto

  • 8 oz protein pasta (optional, but this involves using a seperate pot to cook)

Instructions

Prep the Chicken
1. Pound regular chicken breasts thin or slice into fillets.
2. Lightly season both sides with salt and pepper.


Cook the Chicken
3. Heat 1 tablespoon of oil in a large skillet over medium heat.
4. Add the chicken and cook for 3-4 minutes per side until golden and fully cooked.
5. Remove the chicken from the skillet and set aside on a plate.


Make the Sauce
7. Lower the heat to medium-low and add the remaining 1 tablespoon of oil to the skillet.
8. Sauté the garlic and tomatoes for 4-5 minutes until the tomatoes soften.
9. Blend the cottage cheese until smooth, thinning with water or broth if necessary.
10. Stir the cottage cheese and pesto into the skillet and bring to a gentle simmer. Adjust salt and pepper to taste.


Combine and Serve


Optional: If you're adding pasta, cook it separately according to package instructions until it's al Dante.


11. Serve the creamy pesto chicken over the pasta or mix the pasta directly into the skillet.
12. Simmer for 2-3 minutes to heat everything through.
13. Serve hot, topped with fresh basil, extra pesto or parmesan if desired.
