  • 2-3 ripe/overripe bananas (about 1 ¼ cups mashed)

  • 2 tablespoons honey or maple syrup

  • 1 egg

  • 1 teaspoon pure vanilla extract

  • 1 ½ cups quick-cooking oats

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon fine sea salt

  • ½ cup chocolate chips or other mix-ins (shredded coconut, dried cranberries, raisins, etc.)

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.

  2. In a large mixing bowl, mash the bananas.

  3. Add the honey, egg, and vanilla extract, stirring to combine.

  4. Mix in the oats, cinnamon, and sea salt until well combined.

  5. Fold in your mix-ins of choice, if desired.

  6. Use a 1-tablespoon measuring spoon or cookie scoop to portion the dough onto the prepared baking sheets, spacing them about 2 inches apart.
