Ingredients
1 small-medium yellow onion, diced
Some diced ginger
Olive oil for sautéing
2 garlic cloves, minced
1 tsp turmeric
1 tsp cumin seeds (or 1/2 tsp cumin powder)
1/4 tsp black pepper
1 heaping tbsp tomato paste
1 1/2 cup vegetable broth
1 cup coconut milk (I'm using Trader Joe's')
1 can butter beans, drained and rinsed
Chopped Cilantro (optional)
Instructions
Sauté: Heat olive oil in a pan over medium heat. Sauté diced onion until translucent. Add garlic, ginger, turmeric, cumin, and black pepper. Stir for 1-2 minutes until fragrant.
Build flavor: Stir in the tomato paste and let it fry for 1-2 minutes to develop its umami.
Simmer: Add vegetable broth, coconut milk, and butter beans. Cook until the beans release their starches and the sauce thickens, about 10 minutes.
Finish: Swirl extra coconut milk on top and garnish with cilantro (optional).
Serve: Dig in with some toasty bread for the ultimate cozy meal!
