Ingredients

  • 1 small-medium yellow onion, diced

  • Some diced ginger

  • Olive oil for sautéing

  • 2 garlic cloves, minced

  • 1 tsp turmeric

  • 1 tsp cumin seeds (or 1/2 tsp cumin powder)

  • 1/4 tsp black pepper

  • 1 heaping tbsp tomato paste

  • 1 1/2 cup vegetable broth

  • 1 cup coconut milk (I'm using Trader Joe's')

  • 1 can butter beans, drained and rinsed

  • Chopped Cilantro (optional)

Instructions

  1. Sauté: Heat olive oil in a pan over medium heat. Sauté diced onion until translucent. Add garlic, ginger, turmeric, cumin, and black pepper. Stir for 1-2 minutes until fragrant.

  2. Build flavor: Stir in the tomato paste and let it fry for 1-2 minutes to develop its umami.

  3. Simmer: Add vegetable broth, coconut milk, and butter beans. Cook until the beans release their starches and the sauce thickens, about 10 minutes.

  4. Finish: Swirl extra coconut milk on top and garnish with cilantro (optional).

  5. Serve: Dig in with some toasty bread for the ultimate cozy meal!
